• For Salad.
  • 1/2 watermelon, ripe
  • 200 g rucola leaves
  • 1 medium onion
  • 200 g Feta cheese
  • 50 g Walnuts or Seeds (Pine-,Pumpkin-,and/or Sunflower)
  • For Dressing:
  • 50 ml good Balsamic vinegar
  • 150 ml good extra virgin olive oil
  • Salt, sugar and fresh crushed black pepper.

Method:
Wash, peel and cut watermelon into chunk-sized pieces.
Peel onion and cut into thin slices.
Wash and dry Rucola leaves
Cut Feta cheese into smaller cubes
Dry-roast Walnuts or any other seeds (Pine-,Pumpkin-, Sunflower- etc) until light golden brown and aroma starts to develop.

For dressing, mix ingredients together and season to taste with salt, pepper and sugar.

Mix gently salad ingredients in a bowl, then drizzle dressing over and mix again gently.
Serve with fresh bread.
Can also add fresh mint leaves (optional)
