• 200 gr Cooked Lobster Meat
  • 4 Cooked Lobster Claws
  • 2 Medium Shallots
  • 100 gr French Beans
  • 1 Avocado
  • 1 Tomato Concassed
  • 50 gr Plain Yoghurt
  • 50 gr Creme Fresh
  • 1 Spoon of Mayonnaise
  • Half- Lemon Juiced
  • 2 Spoons of Cognac
  • Salt and Pepper to Taste
  • Salad Greens to Garnish

Salad:

Dice all ingredients to the same size. Mix all ingredients, including seasonings, in a medium size stainless steel bowl.

Serving:

In a metal pastry ring layer all ingredients with a mix of salad greens (personal preference) and top with the cooked lobster claw and a drizzle of extra- virgin olive oil.
