- 200 gr Cooked Lobster Meat
- 4 Cooked Lobster Claws
- 2 Medium Shallots
- 100 gr French Beans
- 1 Avocado
- 1 Tomato Concassed
- 50 gr Plain Yoghurt
- 50 gr Creme Fresh
- 1 Spoon of Mayonnaise
- Half- Lemon Juiced
- 2 Spoons of Cognac
- Salt and Pepper to Taste
- Salad Greens to Garnish
Salad:
Dice all ingredients to the same size. Mix all ingredients, including seasonings, in a medium size stainless steel bowl.
Serving:
In a metal pastry ring layer all ingredients with a mix of salad greens (personal preference) and top with the cooked lobster claw and a drizzle of extra- virgin olive oil.
