• Salmon :-
  • 180-200g Salmon steak
  • 50g Oil
  • 20g Garlic
  • 5g Herbs
  • 1 piece Lemon juice
  • Peel of lemon
  • White Butter Sauce :-
  • 500ml Fish fumet (stock)
  • 125ml White wine
  • 75ml White wine vinegar
  • White peppers
  • 125g Shallots
  • 350g Butter
  • Mixed Noodles :-
  • 160g Noodles
  • 40g Carrot
  • 40g Leeks
  • 40g Celeriac
  • 100g Snow peas

Salmon:

1. Marinate the salmon using oil, garlic, herbs, seasoning and keep

overnight

2. Grill the salmon on a grill with oil for 2 minutes on each side.

3. Finish cooking in an oven at 180 oC for 10-15 minutes.

White Butter Sauce:

1. In a saucepan take the white wine and white wine vinegar, fish fumet,

shallots, and white peppers and reduce.

2. Strain and add butter 1 spoonful at a time and whisk.

3. Keep the sauce warm while you do this to avoid the sauce

splitting.

4. Add cream and season

Mixed Noodles:

1. Cut the vegetables in juliennes (10 cm in length approx)

2. Cook the vegetables in water.

3. Cook the noodles.

4. Sauté the noodles and vegetables together in oil.

5. Add seasoning.
