• 2 tablespoon fresh lime juice
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of sugar
  • a pinch of black pepper
  • 5 table spoon of extra-virgin olive oil
  • 600g of green leaf lettuce (trimmed)
  • 150g of watercress
  • 1/2 pomegranate
  • 2 cherry tomatoes
  • 2 heart shaped puff pastry


1. Whisk together lime juice, sugar, salt and pepper until sugar and salt are dissolved, then add oil in a steady stream, whisk until combined.

2. Combine watercress and green leaf lettuce in a large serving bowl. Toss with just enough dressing to coat.

3. Transfer to plate to serve. Sprinkle the pomegranate and garnish with cherry tomatoes and heart shaped puff pastry.

4. Clean the plate rim and ready to be served.
