• 225g Flour
  • 5g Baking powder
  • 3g Salt
  • 40g Sugar
  • 55g Butter
  • 40g Raisins (OPTIONAL)
  • 1 Egg beaten
  • 75ml Milk
  • 1 Egg
  • 1 Egg yolk
  • Pinch of salt

METHOD:

  1. Preheat oven at 200 degree celsius
  2. Line a baking sheet with baking paper
  3. Sift flour, baking powder and salt then strain
  4. Add sugar and mix well
  5. Rub the butter into the sifted ingredients
  6. Whisk the milk and egg together and then add to sifted Ingredients
  7. Cool the dough for 20 minutes
  8. Place the dough on a lightly floured surface and roll in circles approximately 1 inch (2.5 cm) thick
  9. Cut the dough into wedges and arrange them on baking sheet on the baking paper
  10. Beat the egg, egg yolk and salt.
  11. Brush the mixture on the top of each scone
  12. Bake for 15 – 18 minutes or until the scones are golden and firm
